One-Pan Shrimp and Rice

This flavorful and easy-to-make dish features succulent shrimp cooked with seasoned rice and vegetables in a single pan. It's perfect for a quick weeknight meal with minimal cleanup.

Ingredients:

  • Shrimp - 1 pound (large, peeled, and deveined)
  • Olive Oil - 2 tablespoons
  • Onion - 1 small, finely chopped
  • Garlic - 3 cloves, minced
  • Bell Pepper - 1, chopped (red, yellow, or green)
  • Long-Grain Rice - 1 cup (uncooked)
  • Chicken Broth - 2 cups
  • Tomato Paste - 2 tablespoons
  • Paprika - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt and Pepper - to taste
  • Parsley or Cilantro - for garnish (optional)
  • Lemon Wedges - for serving (optional)

Instructions:

  1. Sauté the Vegetables: In a large, deep skillet or sauté pan, heat the olive oil over medium heat. Add the chopped onion and bell pepper, and cook for 4-5 minutes until softened. Add the minced garlic and cook for an additional minute until fragrant.

  2. Add the Rice: Stir in the uncooked rice, paprika, cumin, and tomato paste, coating the rice with the oil and spices.

  3. Cook the Rice: Pour in the chicken broth, season with salt and pepper, and stir to combine. Bring the mixture to a boil, then reduce the heat to low. Cover the pan and let it simmer for 15-18 minutes, or until the rice is tender and the liquid is absorbed.

  4. Cook the Shrimp: Once the rice is almost done, arrange the shrimp on top of the rice. Cover the pan again and cook for an additional 5 minutes, or until the shrimp are pink and cooked through.

  5. Garnish and Serve: Remove the pan from the heat, fluff the rice with a fork, and sprinkle with fresh parsley or cilantro. Serve with lemon wedges on the side for a fresh burst of flavor.
