Ingredients:
- Shrimp - 1 pound (large, peeled, and deveined)
- Olive Oil - 2 tablespoons
- Onion - 1 small, finely chopped
- Garlic - 3 cloves, minced
- Bell Pepper - 1, chopped (red, yellow, or green)
- Long-Grain Rice - 1 cup (uncooked)
- Chicken Broth - 2 cups
- Tomato Paste - 2 tablespoons
- Paprika - 1 teaspoon
- Cumin - 1/2 teaspoon
- Salt and Pepper - to taste
- Parsley or Cilantro - for garnish (optional)
- Lemon Wedges - for serving (optional)
Instructions:
Sauté the Vegetables: In a large, deep skillet or sauté pan, heat the olive oil over medium heat. Add the chopped onion and bell pepper, and cook for 4-5 minutes until softened. Add the minced garlic and cook for an additional minute until fragrant.
Add the Rice: Stir in the uncooked rice, paprika, cumin, and tomato paste, coating the rice with the oil and spices.
Cook the Rice: Pour in the chicken broth, season with salt and pepper, and stir to combine. Bring the mixture to a boil, then reduce the heat to low. Cover the pan and let it simmer for 15-18 minutes, or until the rice is tender and the liquid is absorbed.
